New “Cuisine Of The Season” Dining Series Debuts

Enjoy farm-to-table freshness through year’s end with the NEW Cuisine of the Season dining series at the Tides Inn. The luxe resort set on a peninsula off the Chesapeake Bay is creating seasonal menu items made from regional fare and paired with Mid-Atlantic wines. A delectable treat for local and visiting foodies, the Cuisine of the Season series will be held every other month beginning on Thursday, July 28 through Thursday, December 2, in the East Room restaurant at the Tides Inn.

If you think the Virginia Chesapeake is only known for its seafood, think again. Tides Inn Executive Chef TV Flynn incorporates an abundance of local and seasonal produce from the Irvington farm stand onto his menu including corn, asparagus, heirloom tomatoes, apples, pumpkins, cantaloupes, duck, poultry, ham and of course, the areas famous Rappahannock River oysters, striped bass, sea scallops and blue crabs.

The yearlong culinary series will showcase an array of these local items with seasonally themed 4-course wine dinners including the “Ripe from the Garden” dinner featuring a menu of Caprese Salad of Heirloom Tomatoesmade with Fresh Mozzarella and Grilled Silver Queen corn Salsa; Garden Herb Roasted Atlantic Snapper with a Minted Pea Puree and Pea Tendrils; Sumac Dusted Lamb Loin featuring Wilted Baby Leeks, Butter Beans, Oven Dried figs and Feta tossed with House Made Pappardelle Pasta; and a “Red, White and Blue” Strawberry-Blueberry White Chocolate Tart.

Following the completion of each seasonal dinner, the resort will also select one dish to highlight as a daily special on the East Room dinner menu for a limited time. Cuisine of the Season Thursday night dinners are $85 per person, including paired wines by the glass.

o Skillet Seared Virginia Coast Sea Scallops with Butternut Squash-Vanilla Puree and Ginger Snap Pumpkin Crème Brulee

· December 2 Christmas Around the World

o Tuscan Roasted Chestnuts, Cuban Egg Nog, Danish Roast Duck with Apples and Braised Cabbage
